Garlic Scampi with Chukar Cherries Cherry Pomegranate Chutney

1 lb Shrimp- peeled and deveined | 1 Yellow Onion- julienned | 4 Garlic Cloves- chopped |
2 Tbsp Olive Oil | 1 Tbsp Parsley- chopped | ½ Cup Dried Rainier Cherries | ¼ Cup Dry White Wine | 1 Jar Chukar Cherries Cherry Pomegranate Chutney
In a small bowl, soak the Rainier cherries in the white wine for 10 minutes. In a medium size sauté pan over medium-high heat, add oil and onions and cook for 4-5 minutes- allowing the onions to caramelize. Add garlic and prawns to the onions, cook 2-3 minutes. Add the Rainier cherries and white wine to the sauté pan and cook 3 minutes. Turn heat to low and add ½ cup of Cherry Pomegranate Chutney. Allow to simmer 3-4 minutes for flavors to incorporate and serve, top with chopped parsley.
