Refried Beans

Ingredients
1 CUP OF PINTO BEANS
1 T SALT
½ OF ONION
4 T OLIVE OIL
¼ CUP DICED ONION
WATER
Directions
SOAK BEANS OVER NIGHT OR 6 HOURS BEFORE COOKING. RINSE THEM AND BRING IT TO A BOIL FOR 60 TO 90 MINUTES, OR UNTIL THEY ARE SOFT. DRAIN THE WATER AND ADD NEW WATER. ADD ½ OF AN ONION, AND SALT.
PREHEAT OIL IN A FRYING PAN AND SAUTE DICED ONION (DO NOT BURN)
ADD THE BEANS WITH JUST A LITTLE BIT OF THE JUICE AND MASH THEM VERY WELL. PERFECT FOR SIDE DISH
1 CUP OF UNCOOKED BEANS EXPANDS TO 3 CUPS OF COOKED BEANS.
